Vanilla Heaven Cupcakes


Vanilla Heaven Cupcakes
(make about 18 cupcakes)

1 cup milk room temperature
3/4 cups egg white (5-6 egg) room temperature
1 tsp pure vanilla extract
2 1/4 cups plain cake flour (regular all purpose can be substituted)
1 3/4 cup sugar
4 tsp baking powder
1 tsp salt
12 tbsp unsalted butter, softened.

-preheat oven to 350F
-pour the milk, egg whites & vanilla extract to medium bowl & mix with a fork until blended
-mix the flour, sugar, baking powder & salt in the bowl of an electric mixer at lowest speed. add butter scoop by scoop continue beating at slow speed until the mixture resembles moist crumbs, with no powdery ingredients remaining, about 1 minute.
-add all but 1/2 cup of milk mixture to the crumbs & beat at medium speed for 1 minute. Add the remaining 1/2 cup of milk and beat 30 seconds longer. Stop the mixer & scrape the sides of bowl. Return the mixer to medium speed and beat about 20 seconds longer.
-pour the batter into muffin cup about 80% full. Bake for 20-25 minutes.Insert toothpick into the center of a cupcake, it it comes out clean, it is done.
